The aroma is richer than previous vintages, with a dense bouquet of black stone fruits and spice, lifted by notes of dark berries, leather, dried herbs, and violets. Dried fennel, cranberry, and a distinctive desiccated citrus thread brightness through its savory profile. Sourced from mountainside sites, we pick our Petit Verdot based on flavor and balance, enhancing its ethereal qualities with whole cluster inclusion during fermentation to reveal a full range of aromas in the final blend.” - Maya Hood White&nbsp;<h4>Aging &amp; Cellaring&nbsp;</h4>2021 Eluvium was aged for 18 months in French oak barrique, 40% new.
