In celebration and appreciation, we will be offering special "Founder's Flights" in the Tasting Room beginning October 20th, as well as delicious dishes inspired by foundational contributors here at Early Mountain. We hope you can join us to raise a glass (or two)!&nbsp;We’re so pleased to highlight Neal Wavra for our first set of features, available October 20th-24th. Neal is the proprietor of award-winning Field &amp; Main restaurant in Marshall, VA and a long-time wine educator who helped lay the groundwork for the strong knowledge of our hospitality team.&nbsp;&nbsp;<img src="https://res.cloudinary.com/dl1y77tpm/image/upload/v1678805623/634fec63a47048d16d2e03e8_Neal_p_500_c6694eecd7.jpg" alt="634fec63a47048d16d2e03e8_Neal-p-500.jpg">&nbsp;Neal is a consummate hospitality professional and in our early years helped to train our service team, select thoughtful wines for our “Best of Virginia” program and set the path for the knowledge and expertise showcased at each table. He was also involved in production, tasting blends and offerings feedback from his global perspective. We were pleased to open his training sessions to others in the Virginia wine community as well, part of our foundational believe that we want to grow and learn with our neighbors. Neal straddles both front-and-back of house with his FABLE hospitality consulting company and brings a long history of working with renowned properties such as Blackberry Farm and Charlie Trotter’s.&nbsp;His restaurant, Field &amp; Main, has helped transform downtown Marshall into a dining destination with hearth-inspired, locally sourced, globally inspired cuisine served in a historic setting. It’s also one of the top spots to drink Virginia wine with thoughtful producers featured and a wide assortment of library bottles.&nbsp;For our founding feature, Neal curated a “Zesty” wine flight featuring bright and zesty whites that maintain their acidity, thus making them ideal for food pairing. The flight traverses the globe with a powerful Loire Chenin Blanc, focused and precise Hunter Valley Semillon and stone fruited Rheingau Riesling. These three benchmark whites flank our Early Mountain Petit Manseng, also a grape that maintains acidity even in warm growing seasons.&nbsp;A talented chef, Neal did dual duty this week, creating a seasonal dish, interpreted by Chef Tim Moore. His Twice Baked Honeynut Squash with House MadeChorizo &amp; Bourbon-Maple Gastrique honors the produce teeming at farm markets this October.&nbsp;Our wine dinner at Field &amp; Main this week is sold out but come get a taste of Neal’s generous &amp; thoughtful approach to hospitality at Early Mountain this week.&nbsp;Stay tuned for the next offerings... we'll be offering distinctive features for the next four weeks.
